Quick & Easy Wild Salmon Cucumber Sandwich

Makes 2 sandwiches


2 cans
(170 g each) Gold Seal® Alaska skinless boneless sockeye salmon
½ lemon freshly squeezed juice & zest
2 Tbsp. butter
1 Tbsp. mixed fresh herbs (parsley, chives, tarragon), chopped
4 slices whole wheat bread
10 slices English cucumber
  salt & pepper

  1. Beat together softened butter with the lemon zest and juice and the chopped fresh herbs.
  2. Spread lemon butter mixture over thick slices of whole wheat bread and top with succulent chunks of canned salmon and slices of cucumber.
  3. Season with salt and freshly ground black pepper. Cut off crusts if desired and slice into triangles.
