| Quick & Easy Wild Salmon Cucumber Sandwich |

(170 g each) Gold Seal® Alaska skinless boneless sockeye salmon |
| ½ lemon |
freshly squeezed juice & zest |
| 2 Tbsp. |
butter |
| 1 Tbsp. |
mixed fresh herbs (parsley, chives, tarragon), chopped |
| 4 slices |
whole wheat bread |
| 10 slices |
English cucumber |

salt & pepper |
- Beat together softened butter with the lemon zest and juice and the
chopped fresh herbs.
- Spread lemon butter mixture over thick slices of whole wheat bread and
top with succulent chunks of canned salmon and slices of cucumber.
- Season with salt and freshly ground black pepper. Cut off crusts if desired
and slice into triangles.
